Chicken with chorizo and Parma ham
Serves: 4

  • 4 small chicken breasts
  • 2 small chorizo sausages
  • 4 slices parma ham
  • 1 clove garlic
  • Olive oil
  • Salt & pepper
  1. Make an incision under the breast being careful not to cut all the way through.
  2. Turn your knife sideways and gently cut through the flesh to make a little pocket, repeat with your knife the other way.
  3. Slice the chorizo and place inside the pockets, folding back the chicken to hide the chorizo.
  4. Wrap the breasts in the parma ham and then in cling film and then in foil.
  5. Crush the garlic and add a little olive oil.
  6. Cook the chicken in a hot oven for 15 minutes, turning occasionally.
  7. Remove foil and film, brush with the garlic butter and gently fry in a non-stick pan until golden brown.
  8. Serve with a nice green salad.
